Golden Corral #877, 2226 Rockford St., Mount Airy. Inspected Feb. 25, score 93.5. Violations: 1) Hands clean and properly washed: When to Wash – P – An employee was witnessed handling dirty dishes to load the dish washer and then removed clean dishes without first washing their hands. Employees must wash their hands between handling contaminated surfaces and clean and sanitized surfaces. The handled dishes were re-washed and the employee washed their hands to correct the violation.
2) Food-contact surfaces: cleaned and sanitized: Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness – P – The sanitizer tested below 150ppm quat in the wiping cloth buckets throughout the facility today. Keep all sanitizer prepared to manufacturers specifications (150-400ppm for sanitizer used here). The wiping cloth buckets were re-made to correct the violation. Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils – P – Metal and plastic containers, a set of tongs and a spoon was found with build-up on them while in clean storage. Keep all food contact surfaces clean to sight and touch. The contaminated items were removed and cleaned to correct the violation.
3) Insects and rodents not present; no unauthorized animals: Outer Openings, Protected – C – Replace or repair the self-closers on the back doors of the restaurant so that they close properly.
4) Personal cleanliness: Effectiveness-Hair Restraints – C – An employee was not wearing a hair restraint while preparing slaw in the vegetable prep area. All foodservice employees must wear an effective hair restraint. Prohibition-Jewelry – C – An employee was wearing a watch while preparing food today. Employees cannot wear any jewelry on their hands or arms except for a single plain band ring on the finger.
5) Equipment, food and non-food-contact surfaces approved; cleanable, properly designed, constructed and used: Cutting Surfaces – C – Replace the meat carving board that is chipped. Good Repair and Proper Adjustment-Equipment – C – Repair the handle on the oven and hot hold unit on the grill line. Repair or replace the gasket on the front grill reach in cooler Repair the cotton candy machine that has a plastic glove tied to the inside to hold a piece in place.
6) Non-food-contact surfaces clean: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils – C – Clean the inside of the vegetable prep room hot hold unit. Clean the can rack near the walk in freezer. Clean the shelving in the meat prep room walk in cooler. Clean the container rack in the vegetable prep room.
Las Tarascas, 402 N. Main St., Dobson. Inspected Feb. 24, score 92. Violations: 1) PIC present, Demonstration – Certification by accredited program, and performs duties: Certified Food Protection Manager – C – The person in charge must be certified as a food protection manager. The person in charge today was not certified as a food protection manager.
2) Proper hot holding temperatures: Potentially Hazardous Food (Time/Temperature Control for Safety Food), Hot and Cold Holding – P – Cooked jalepenos and onions were found on the stove top with a temperature below 135 degrees F. All potentially hazardous foods must be kept at or above 135 degrees F. when holding them hot. The jalepenos and onions were reheated to correct the violation.
3) Proper date marking and disposition: Ready-To-Eat Potentially Hazardous Food (Time/Temperature Control for Safety Food), Date Marking – PF – Hotdogs and mozzarella cheese was found in the bottom of the prep unit without a date marking after being opened on Saturday. All ready to eat, potentially hazardous foods must be kept date marked if it will be held over 24 hours. The hot dogs and mozzarella cheese was date marked to correct the violation.
4) Contamination prevented during food preparation, storage and display 3-307.11 Miscellaneous Sources of Contamination – C – A large amount of raw pork and several pieces of torta bread was found in non-food grade bags. Only bags intended for food contact can be used to store food products.
5) Utensils, equipment and linens: properly stored, dried and handled: Equipment, Utensils, Linens and Single-Service and Single-Use Articles-Storing – C – The clean utensil container had water and debris inside of it today. Clean the inside of the utensil and container storage bin.
6) Plumbing installed; proper backflow devices: Protecting Inlet, Outlet and Hose Fitting – C – (REPEAT) The inlet cap no longer will close over the clean water inlet on the mobile food unit today. Keep the inlet protected on the mobile food unit.
7) Physical facilities installed, maintained and clean: Repairing-Premises, Structures, Attachments, and Fixtures-Methods – C – Repair the floor near the dish washing area that is starting to become damaged.
Lowes Produce, 715 W. Independence Blvd., Mount Airy. inspected Feb. 22, score 99.5. Violation: Physical facilities installed, maintained and clean: Drying Mops – C – The mop was found stored in the can wash today. Keep the mop hung to where it can dry properly. Cleaning, Frequency and Restrictions – C – Clean the side of the light fixture in the women’s restroom where dust build-up has accumulated.
